This time, we spoke with Mr. Kobiyama of Hadano Roman Shokudo, a central figure in various communities in Hadano, about the charms of Hadano and Kanai Sake Brewery's sake.

———What kind of place is the Hadano area as known to you?

It's a city with delicious water, so the ingredients and food are all delicious. Seafood and mountain produce are easy to obtain, and recently game meat has also become available.

Hadano Roman Shokudo, a bustling restaurant located just a 5-minute walk from Hadano Station, is a popular hub of the city.
Hadano is a nice place to live, but it may not have any special features that stand out. However, the people here are all so kind that once you come here you'll want to stay for a long time. We are also working to revitalize the local area in order to convey the charm of Hadano.

———What kind of restaurant is Hadano Roman Shokudo?

The interior is decorated with warm lighting and old-modern furniture.
It is a restaurant during the day and an izakaya at night. As a dashi sommelier, I serve udon and oden made with dashi made from the delicious water of Hadano. For lunch, we mainly serve udon noodles, and for dinner, we offer a set course menu with dishes that go well with alcohol, in the style of an "izakaya kaiseki." I have been involved in local revitalization activities for nearly 10 years, including free paper publishing and craft beer brewing, so there are many people who have just moved here and want to know more about Hadano, and we would like to have such people come to visit. I think it's a place where you can understand Hadano if you come here.

———You have sake from Kanai Sake Brewery on display. What kind of sake is it?

We carry over 30 types of sake. Kanai Sake Brewery offers two types of sake: " Genshu Sasa no Tsuyu " and " Shirasasa Tsuzumi Junmai Sake ." Because it goes well with dashi, we use Kanai Sake Brewery's Shirasasatsuzumi Junmai Sake for our "dashiwari" (dashi-wari) which is made by adding oden dashi to sake.

I think "Shirasasa Tsuzumi" is a drink to be enjoyed with meals, so I think it goes really well with food. Its good point is that you can drink it without any hesitation. Because it is a gentle sake, I think it is better served at room temperature or hot sake rather than chilled. When people who don't live in Hadano come, we serve them sake and tell them, "This is Hadano sake." It's an unpretentious drink, so it's great that you can serve it to any customer without hesitation. It goes perfectly with oden.

————The future and expectations for Hadano

We will be opening a startup kitchen called "Hadano Roman Kitchen" to support restaurant openings in February 2022. It will be located on the second floor of "Hadano Roman Shokudo." This kitchen is a "gateway to a new world" for anyone wanting to start a restaurant.
